The Cascadian Kitchen is a collection of culinary play. It is designed for those with an adventurous spirit in the kitchen, for those with curiosity of the world, and for those with gastronomic intrigue.
The recipes and stories are inspired by the Pacific Northwest, my lifelong home. I often feature seasonal and wild ingredients. In some cases, I write about the history and identity of some of those ingredients.
The recipes are written using weights, chiefly grams. I do this because I can be more precise and consistent in my collection. That said, I will approximate volumes for convenience.
My name is Brian. I have been a cook, a caterer, and a kitchen manager. I live in Seattle Los Angeles.
